iTunes

Not liking iTunes much these days.I have Big Sur. Lets just start with a simple complaint. After I convert a song from my library to an MP3 where does it go ? its out there somewhere I know becoz it signals its complete. I check recently added nope. I type in the name and all my previously added versions appear. In order to see if any indeed are MP3 I have to open "get Info". Can't make it any easier ? how about after I convert, it shows up under my opened version.

Put your library to View > As Songs, and sort by Date Added. The newly converted file will be at the top.

While you are in Songs view, you can enable the column for Kind so you can see immediately what is an MP3 without looking at Get Info.
