How do I remove a card that is no longer in use from my wallet

You can go to settings>Wallet & Apple Pay>payment cards>select a card - select remove this card. Repeat for every card you want removed from Wallet. If you are talking about the old information being stored there is nothing you can do. You can try going to settings>general>reset>and reset all settings to see if the clears the Wallet cache.
