In big sur I cannot ever get finder to remember/maintain my text size selection. Every time I create a new folder I have to change the size. And the same with subsequent folder inside t5hat one. I have taken to leaving the View Options window open on my desktop ALL THE TIME!
There HAS to be a better way. I'm happy to go into terminal and make changes if anyone know what will fix it.

This should set the font universally throughtout the Mac for any new folder:
If that doesn't work boot into Safe Mode by booting with the Shift key held down and try setting the font size there. Reboot normally and test again.
NOTE: Safe Mode boot can take up to 10 minutes as it's doing the following;
• Verifies your startup disk and attempts to repair directory issues, if needed
• Loads only required kernel extensions (prevents 3rd party kernel/extensions from loading)
• Prevents Startup Items and Login Items from opening automatically
• Disables user-installed fonts
• Deletes font caches, kernel cache, and other system cache files
