Why does my iPhone 12 take a screenshot every time I touch the upper display?

If you enabled assistive touch, you don't have to tap the back to take a screenshot. If you did enable assistive touch however, you would have this on your screen:



When you tap that, you would open another box which would permit you to take a screenshot from tapping your screen.


Otherwise, the other ways would be to enable Back Tap, which is what you're referring to when you said you're not tapping the back of your phone. Or pressing and holding both the power and volume button at the same time.
