Aside from the two charting templates ('Charting Basics' and 'Table and Chart') don't forget to check out the help at Help > Numbers Help in your menu or the User Guide Online.

Select the table (or the two columns holding the data), then click the Charts button and choose the type of chart you want to produce.

If your choice is a scatter chart, both dates and data must be in non0Header columns.

If your choice is a Category chart, the dates must be in a Header column, and the data in a body (non-Header) column.

You'll find more information and several examples in the Basic Charting template (In the Template Chooser). In the File menu, choose New from Template Chooser. If the first item in that menu is "New" press and hold the option key to change it to "New from Template Chooser". Keep Option pressed until you've clicked "New from Template Chooser."
