Airplay in Big Sur

I have updated my Mac Book Pro to Big Sur along with another colleagues Macbook Air. When we go to screen mirror, the apple TVs in our work environment no longer show up as options and we have to dig deep into the display settings to airplay. It was great in Catalina because we would go to airplay and we would just go to the airplay icon and the list of available devices would be there. No such luck anymore. Anyone have a fix for this?

NOTE: As of 2-25-21 all devices have newest updates, have been restarted and this issue is consistent with multiple Apple TV 4K devices in the environment along with two different models of mac.

In the Display menu, make sure you have AirPlay on. Do this by using the two blue arrows to access the drop-down menu. Make sure the box where it says "Show mirroring options in the menu bar when available" is checked, too.
