I cant send emails from my AOL account on my iphone. I receive e-mails, but cant send them. I have been told to delete and re-install my aol account on my phone. My question is....if I do delete, will I also lose my folders?

I would assume yes, but you can confirm that with AOl or by looking at their support site, since you're using their email account.
