We understand you want to use an Apple Gift Card instead of your regular payment method while making purchases in iTunes. To get started, be sure to redeem it to your Apple ID if you haven't already: Redeem your App Store & iTunes Gift Card
Once you've redeemed it, then your account will always use any credit before other payment methods on your account: How apps, content, and subscriptions from Apple are billed
Just be sure to note that older Apple Store Retail gift cards may not be eligible to be redeemed to your Apple ID as they can only be used for purchases in store or on the Apple Online Store website.
