I have Sold my Series 5 Watch, erased all the data but I haven't unpaired the watch.

New owner of the watch cant connect. I have tried "Find Iphone" selected still listed my old Watch 5 to erase the data but still showing offline only. Talked with the buyed, he tried to restart his both devices, still nothing. How to escalate this without giving him my Icloud?
