Yes, restoring any backup to a device will erase everything on the target device and replace it with the contents of the backup. And Quick Start can only be used to a device that has already been erased.

I think SravanKrA misinterpreted your question. He is correct that it will not delete data from the iPhone, but that wasn’t your question.

You can transfer data from the iPhone to the iPad by syncing through iCloud rather than restoring a backup of the iPhone to the iPad. This will transfer data, but not apps, so you would need to first download the apps to the iPad, then, on both the iPhone and the iPad go to Settings/[your name]/iCloud and turn on all of the sync switches.

There is no other general solution. On a case by case basis you can transfer content from any app that stores data on the app provider’s server rather than on the iOS device; to do that just install the app and log in to your account using the app. A couple of examples are games like Words with Friends, NY Times Crosswords, and Evernote. You can transfer contacts and calendars if the source for the contact and calendar data is a mail server such as gmail, Outlook, MS Exchange, AOL, Yahoo, etc. This is again transferring not from the iPhone, but from the mail provider’s server.
