Your battery has aged and its maximum capacity is now very low – that explains the symptoms you're seeing. Have the battery replaced:

I've had the same issue since installing IOS 14.5.1. Every now and then, the phone just shuts itself down even though battery shows to be 80%+. My max capacity is 86%.
