Is there an easy way to change one's Apple ID?
If so, is it complicated? I 'd want it to be changed on my iMac, iPad, iPhone and iPod too.

Are you wanting to create a new Apple ID or change the email address on your current Apple ID? If you want to change the email address on your current ID, note the restrictions in the article.
What to do after you change your Apple ID or password - Apple Support I suggest doing this before you change your Apple ID or password.
After changing the address, you will need to change it on each device/computer.
If you create/use a new Apple ID, you will lose access to some of your data and the purchases made with your existing Apple ID.
