How do I purchase something when I have family sharing without the organizer knowing about it ?

You probably can't. Something to try. Buy/redeem Apple Gift cards to the account. Charges will be deducted from the account balance before the organizer's credit card is charged.

Apple Card

Gift cards redeem.

Gift Card - can’t redeem.

Family Sharing - Hide and unhide music, movies, TV shows, audiobooks, and books

Purchases - Hiding/Unhiding.
