My iPhone 11 will not update to IOS 14.6, I have 14.5.1 installed and although there have been some issues it has been working. Now all I get when I try to update is "Unable to Check for Update"

Are you running 14.5.1 beta, by chance? You might have use the restore method to get to the public release of 14.6 in that instance: https://support.apple.com/en-us/HT203282

Miss smarty parity. Most people including myself wouldn’t know if I was running beta or whatever. We just update our phones when it needs it. Apple puts out the updates. My iPhones, iPads, (5) total will not update.

In that case it is probably an internet connection problem with your router. Restart all of your router and then reset all of your devices. Be sure when you update that each device has at least a 50% battery charge, is showing a WiFi connection and you are not using a VPN.
