Thanks Viking. I have installed the updated Epson driver and it does seem to function with Apple's "Image Capture" software. But that's a very primitive piece of Apple software that doesn't meet my needs. I've heard good things about VueScan, but I cannot tell from their site if Big Sur on Apple silicon is supported. I've made an inquiry to them and will certainly post their response when I hear back.

Epson released in January 2021, their V500 Photo scanner driver for Apple's Image Capture. They do not differentiate if it is compatible with the M1 or Intel architecture running Big Sur.
If you install this driver and it does not work with the 24 in iMac, then throw your hands up in disgust, because the paid, universal binary VueScan needs the Epson driver installed to support this scanner.
If you're looking for more advanced scanning software, SilverFast works with your scanner (and many others). I'm using the current version 9 in Big Sur with a V850.
It can be downloaded as demo software. Can't remember if you first have to create an account to do that.
