How do you find old text messages on iCloud?

You don't. If you have iCloud messages turned on, if a message is gone, it is gone. There is no way to recover it. If you have iCloud messages turned on, that syncs them to all your devices signed in with the same Apple ID. If you delete on one device, it deletes from all devices.
