Apple Watch won't pair with new phone.

So I just recently got a new phone (Iphone 12) and I'm trying to pair my apple watch with it but every time I do it says it won't pair because it needs to be update but I can't update it without pairing it. I don't have my old phone anymore so I can't use that either. It's like a vicious cylce: it won't pair without being updated but I can't update it until it's paired. I've reset it three times as well and nothing is working.
