My iPhone was lost, and I have no expectation of getting it back, so i set an erase iPhone data from find my iphone. I’m not sure if it will connect to wifi, but I know the phone has unlimited cellular data at the least. if it’s turned on in an area with service, will the erase still complete?

Yes it will as long as the cellular service is still active on it. All the iPhone needs is the command from you from another device. Hopefully, the battery is still charged to receive the command and then perform the task.
