I accidentally deleted my old iPhone 7 from my icloud account. Problem is that the phone was reset and now says can't activate update required. I want to sell the phone but cannot in it's current state. Please help! I know my icloud account information.
How do I delete my icloud account off the already reset phone that has activation lock. I deleted the phone off my icloud thinking it would erase it.

If you are not the owner and do not have the Apple ID and Password then there is no way that you can get into this iPhone unless the original owner shares the Apple ID and password with you. If you are lucky you can get into this iPhone if they (owner) accidentally remove the device from their Apple ID.
