Magsafe charger
Should magsafe charger stop charging when my iphone 12 pro 100% charged.

It will not change the battery icon on your iPhone if that's what you mean.
As long as the charger is connected it will show the lightning bolt through the battery.
Charging is controlled by the phone itself rather than the charger and as such the iPhone cannot be overcharged. It will stop charging at under 100% and wait until its down to 99 or 98% before charging again.
You can leave the charger connected and no harm will come the iPhone or the battery.
