The specs as you can buy them, are the configurations that exist.
These offer a different technology than older intel-based macs.
These are published; and basics such as dual-external displays
are not among options for these models. Later ones may/not
offer other specifications. To check specs; see Mac store online.
Apple tech specs for the model you ask are here; both spec
versions have similar limitations. (So do M1 MacBook Pros.)

The Mac mini M1 desktop model offers dual external displays;
higher specs than the portable M1s. (iMac M1 shows promise.)
Newer different M1x build specs have been said to be on
their way maybe before end this year; or early next. Many
better specs; and things to know before you buy. I'd wait.
