Because Betas are test versions of the software. They are not finished and can and many times will have issues some that may render your device unusable.
You must be aware of this, and understand that Apple will not provide any support for devices running Beta versions and as such you must be capable of handling these issues on your own.
That is why installing Betas is "At your own Risk"
iOS 15 is still in beta. Wait until it's out, and then use a computer or the Software Update function in Settings.
