iPad setup for grandparent

I have an iPad that I want to give to my grandparent. I have profile setup questions. Do I need to create an Apple ID for them? Can I use my apple ID but restrict access - like a child guard? Thanks!

first, follow these steps to remove the device from your account: https://support.apple.com/en-us/HT201351

second, they should have their own Apple ID, appleid.apple.com

Then you can set them up a device connected to their account like new.
