I started the update process on my macbook pro last night. This morning I turned on my mac and the volume that I created (an APFS case-sensitive volume) was gone. It was not just un mounted. It was completely gone. Is there any way to retrieve this?

Your computer runs the macOS...
You can restore from back up and try again or reinstall
