When I move photos into an album with the cloud, I noticed that they still appear in my main photo stream. If I delete them from the stream, they are then deleted from the new album. Is there a way to keep the photos in album but not in main stream?

No. All photos and videos remain in your library. Your pictures can appear in multiple albums.
