How does two factor authentication work when traveling internationally with a different SIM card so you don’t have access to your US number? I have family in the UK and have been reluctant to use 2-factor authentication because I don’t have access to my regular phone number.

I have used two-factor authentication since it first became available and I have never had to use my trusted phone numbers. Since my iPhone and other devices are trusted devices, the phone number has yet to be needed. See: Two-factor authentication for Apple ID - Apple Support

If you are concerned about the remote possibility that you might need a trusted phone number, one option would be to set up additional numbers as described in the above link.
