How do I stop numbers and go back to regular text?

Are you talking about using the on-screen keyboard on an iOS or iPadOS device?

If so, a tap on the 'key' at the left end of the first row of the keyboard will switch you out of your current key set and into the type indicated on the key—text, numbers or symbols.
