I’ve just swapped my phone 11 to a13 and it no longer shows how many unread emails I have on the Home Screen. I’ve tried to reset this in email settings but there doesn’t seem to anything showing this?

If you're talking about the number in red tiny circle, check Settings>Notifications>Mail and enable BADGE option.
When done, restart your iPhone.
