how do i delete the accounts on family sharing and start new ones?

If you simply wish to change the email addresses used on the accounts, log into each account and:


Change your Apple ID - https://support.apple.com/HT202667 - "Follow these steps to change the email address that you use as your Apple ID."


"After you change your Apple ID email address or password, you might need to update your sign-in information with any Apple services you're using" Click on this link to read "What to do after [or before] you change your Apple ID email address or password" --> https://support.apple.com/HT204071

You cannot, different accounts cannot use the same email. One email address = one account


You can remove one of the Apple IDs you created from Family Sharing and then just have all the children's devices use the other Apple ID you wan to keep. If that's what you want to do.


Otherwise, the recommended approach is for each member to have their own Apple ID logged in to their owned devices.
