I have a MacBook Air (13 inches, mid 2012). What is the latest OS I can install and why can't I find them on the Apple Store?

Back up your data, check your applications for compatibility, and click on High Sierra, Mojave, or Catalina. Older OS versions won't appear when searching the App Store and can only be accessed through direct links.
