To see which key produces what, you use Keyboard View (not Font Book).

To view the character map of a font family, select the font from the List, and check the View option in the upper left corner of the app window. Also check the font size selector or slider on the right edge of the Font Book window.

AFAIK, there is no way to visualize the actual mapping of the characters to the keyboard.

I hope I'm wrong.
