Did you first make a backup of your old device and then use the backup to setup the new device? https://support.apple.com/en-us/HT204184

Did you use QuickStart to transfer from the old to new? https://support.apple.com/en-us/HT210216

If not, do you have anything synced to iCloud? Once you sign in on your new device, that content will download.
