How do you change the name of a Notes folder?

How do you change the name of a Notes folder? Mine are all called "Note." There is an Edit button, but all that happens with it, is the text becomes dim and cannot be selected.

You can only rename custom folders you made.

You cannot rename folders that come from email accounts those will just be called Notes and exist under their parent Email account.
