I have unchecked all the boxes but I can't seem to get rid of the keyboard preferences icon in the menu bar. A previous suggestion here was to uncheck the input menu in input sources, did that but to no avail. (Sorry if there's no screenshot, this website keeps saying error when I try to upload one)

System Preferences > Keyboard > Input Sources is the only location I'm aware of…
You could try booting into Safe Mode and then restart normally.

If you haven't updated to Monterey 12.1 you could try that.
