In attempting to re-organize my Monthly expense chart in Number's, I ended up losing everything and my file is now blank. Any advice on how I may (if possible) recover my original data ? I didn't think I ever erased anything. I am using a McBook Pro.

If you are able to find the file and open it, but find that all its contents are blank, then you may be able to get your data back by going to File > Revert to > Browse All Versions ...

If you have ever Saved this file, AND have been running Time Machine, or another backup application, you should be able to find the last-saved version of your document using that application.
If you have NOT named the document, and have NOT specified a location for it to be stored, you'll likely have to recreate it.
macOS 12 has had two updates since 12.0; first to 12.01, and a second to 12.1. If you've not done so yet, I'd suggest doing that update when convenient (although it may or may not have an effect on this issue).
