Sign into iCloud in Settings>iCloud with your Apple ID. Check 'Mail' in the list there: you will be asked to create an icloud.com address, and when done the account should appearw automatically in Mail.

Just a FYI if you're getting an error message setting it up right now it is because icloud mail down Apple - Support - System Status
