Template issues in Pages

I trying to use the Contemporary Letter template in Pages and it won't allow me to change the footer to my contact info, while keeping the separation brackets. Anyone know how to edit this??

The separator bar across the bottom of that template is selectable, and the entire address content is in placeholder text, which means that the instant you type in that salmon color content, it is cleared and you then type in your contact info.

Tested: Pages v11.2, macOS 12.1, and the Contemporary Letter Template.
