monterey disk utility missing options

Recently upgraded from High Sierra to Monterey, and I just noticed Monterey's Disk Utility has fewer Format options than High Sierra had, when trying to erase a "WD My Passport 2626" 1TB external HDD.

For this external drive, the only Format options available are...

  1. Mac OS Extended (Journaled)
  2. Mac OS Extended (Case-sensitive, Journaled)
  3. MS-DOS (FAT)
  4. ExFAT

Is this something unique to mechanical hard drives? If so, which option is best if I only plan to use it with a MacBook Pro?

Fyi, my SSD boot drive is APFS formatted in a MacBook Pro 13-inch, Early 2015.
