Can we change the default settings on column headings when creating new playlists yet?
Is there a way to globally change ALL my playlists to a default that I can define somewhere within the software. I look forward to all the amazing help I will be getting on this here in this AMAZING Apple community.

No and no.
You might remember in the old days of iTunes, each new playlist would inherit the view options of the main songs library. Somewhere along the line the default was changed to "playlist view."
And the only way to change the view is one playlist at a time.
