Hi, wondering whether anyone else has had issues around their iPhone 11 Pro Max calls cutting out and then back in again (these are normal phone calls and not via wifi/WhatsApp etc). Very frustrating and almost impossible to use at the mo.
If so, any solutions other than rebooting?

This seems like your carrier issue, Contact your Carrier (Cellular Service Provider) The agency who issued the SIM to you.
