Hello, I'm trying to connect an old Apple 22" Cinema Display to a 2018 Macbook Pro. I had used the Cinema Display with my older Macbook Pro with a DVI to Thunderbolt 1 adaptor, follwed by a Thunderbolt 1-2 adaptor to Thunderbolt 3. Will this work?

The Apple ThunderBolt-2 <-> ThunderBolt-3 adapter supports ONLY genuine Thunderbolt displays, and that can not be modified with any adapters on either end. It is NOT part of your solution.
The USB-C ports on your MacBook Pro 2018 model can be adapted to DVI with one of these adapters:
Monoprice Select Series USB-C to DVI and USB-C (F) Dual Port Adapter - Product # 15243 - $14.03
or if you want to use the USB ports or control the brightness from the Mac:
Monoprice Select Series USB-C to DVI, USB-C, USB Type-A Multiport Adapter - Product # 15759 - $29.99
These work because that display is not over 1920 wide. Wider displays would require Dual-Link DVI which is MUCH more complex.
