Does MAIL in Monterey still only offer 3 font settings under MAIL>Preferences>Fonts&Colors?

I use Catalina IOS on my MAC. I need to increase the font size in MAIL so my visually impaired mother can use the App. Catalina 10.15.7 only offers 3 font settings under MAIL>Preferences>Fonts&Colors?

Before I upgrade to Monterey (or Big Sur) can someone please check for me if they have added more font settings that can be customized under MAIL>Preferences>Fonts&Colors other than these three:

1) Message list font

2) Message font

3) Fixed-width font

I want to increase text size of the mailbox names: Inbox, Sent, Trash, etc.

And in the New Message editor, I want to increase the text size for the TO and SUBJECT edit boxes.

Have a look at the Accessibility System Preference Pane, in particular the Zoom option.
