Transferring iPads between kids/parents

I bought a new iPad Pro for myself (not here yet due to backorder). I currently have an iPad Air 2 which i intend to give to my oldest son, and then give his older iPad mini to my youngest son. I know how to transfer all my stuff to the new iPad Pro, but when it’s time to switch the other 2 should i completely erase them before setting them up? We have family sharing and each of them has their own Apple ID. So my big question is do i erase the air2 and set it up fresh for my oldest, then the same with the mini for my youngest? Or do i just sign them out and then back in on their new iPads? There are a few apps i do want to keep on each iPad, but i don’t mind if i have to reinstall them.

the reason I’m worried is because i had an original iPad way back when lol and i wiped it clean to give to my sister in law, but then she couldn’t use it at all because it deleted all the previous iOS updates
