I bought a song on iTunes yesterday, with the goal of exporting it as an MP3 and putting it on my son's music player. However, the option "Create MP3 Version" is greyed out.

Are you sure you bought the song from the iTunes Store? Or did you get it with an Apple Music subscription? Songs that you lease with a subscription are DRM copy-protected and cannot be converted to other formats or played on non-Apple approved devices.
