To eliminate spellcheck, I came to Set up auto-correction and add words to your spelling dictionary in Pages, Numbers, and Keynote. It tells me to choose (for instance) Page then go to Preference. THERE IS NO PREFERENCES AVAILABLE.

Where can I go to finally learn how to get rid of Spell Check? It appears everywhere now, it is poor (demi-literate), intrusive and a constant irritant.

And Apple seems to be turning a blind eye.

All Preference commands should be in the Application menu or cmd-,

You should be able to disable it globally in the Keyboard System Preferences, Text tab
