As for Third-Party Software:
Ask your doctor, seeing if they have any knowledge of commercial software that is productive and meets your needs.
There are several. Open the Mac App store and use dictation as a search term.
No doubt you will find others using a web search engine.
I looked at this and they said Dragon is no longer available for MAC's. Microsoft bought Dragon.
