I have 2 MacAirs, the older with intel chip one supports 2 external monitors no problem but the new one, with Apple M1 chip only appears to support one external monitor. Am I doing something wrong (I use the same adaptors for both setups)? or has Apple degraded the specification with the introduction of the new chip?

MacBook Air (2020 or later)

You can use more than one external display using Display Link hubs. It uses USB3 connections to allow external displays. There's a minimal lag that shouldn't annoy you. It's a very well known solution for M1 machines.

The MBA M1 will only support a single external monitor, per Apple. You can also check out the specs.
