iMac 2006-uninstall applications?

I still love working on my big iMac, but it's old (topped out at High Sierra). Wondering if any applications should be uninstalled (like Quicktime) for safety, slowing it down etc. If I do uninstall, can you send a link for instructions?

Workable but harder for me to work with...the Note tool on the bottom of this editor's toolbar, as shown in the image, to copy and paste the output from EtreCheck. In a Reply before you click post, look for this to add longer texts...
