Several apps (both Apple apps and third party apps) have disappeared from my iPhone. They don't even appear when I do a search for them on the phone. These include, among others, Mail and App store. Where have they gone, why, and how do I get them back and ensure this doesn't happen again?

Apps can't just disappear as if by magic. Something had to happen to make them disappear.
What did you do or what were you doing just before you noticed they were gone?
Where you making changes in Screen Time?
Where you perhaps organizing your Home Screen?
The App Store cannot be deleted, but can be restricted if you turned off the option of Installing Apps in Settings->Screen Time->Content & Privacy Restrictions->iTunes & App Store purchases->Installing Apps
As to the Mail App, that can be deleted, but can also be re-downloaded from the App Store once its back. Link-> https://apps.apple.com/us/app/mail/id1108187098

I was pretty sure apps couldn't disappear as if by magic. Whenever I have managed to do the impossible, I turn to you guys!
Check for it under the App Library. Next to the last page of the Home Screen. If it is in the App Library Touch, Hold and Drag the icon to Home Screen. That's it.
Apps are disappearing from my iPhone. What?!?? 😱
