As stated, follow the "format drive" to get started.

Also a warning ... Monterey upgrade requires the presence of an official-Apple drive, which you *may* no longer have. If you plan to upgrade to Monterey (if you even can, based on age of the system) you should plan to have one available for the first upgrade pass for a firmware upgrade. After Monterey is installed you can go on with your new SSD.

For completeness so we do not miss something important, can you please share with up the MacBook Pro SUB-MODEL and what macOS version it is running? Some model with removable hard drive also need the drive cable changed at the same time.

For future consideration:

BEFORE installing a new hard drive or SSD, put it in a temporary external enclosure, plug it in, format it, and clone your entire internal system to it. Test to make sure it boots. Boot back into the internal and proceed with un/install new drive. That way, you will be able to simply boot up with the new drive.
